We are pleased to announce a new class aimed at answering your questions in Lightroom Classic and Photoshop by Barbara Moon Batista and Greg Hyde co-hosting.

This post is to find out the level of interest for this class before proceeding. We ask that you have some experience in either Lightroom Classic or Photoshop. This is not a class to jumpstart you in either program. It is intended for photographers to see what each program can bring to their photo tool kit.

1. We will ask you to submit a photo(s) with question(s) to be reviewed in the class.

2. We would ask that your submission be put in a Dropbox provided the Thursday before the class with to the question emailed in order to provide us with time to prepare.

3. The class will be held virtually on Zoom. It is not necessary for you to have a Zoom account. But you do need to download the application before class.

4. The first class will be an orientation about how to use Zoom, an overview of the course and time for Q&A.

5. This class is limited to 8 in order to provide enough time for Q&A.

6. It is offered at no charge.

A Conversation about where we are in time and space

I am sure all of you feel the changes in our country, society and towns as much as everybody else in your community whether at work, school or at home. Normal has been interrupted by something we can’t control. Most of us have been asked to shelter in place for a long period of time with uncertainty as our daily companion. Here is some information and my thoughts.

Most of you know that I reach at Pacific Grove Adult School. We were just at the end of the Winter session and registration had opened for the Spring Session when the edict came from the governor that all schools must close. We had one more week of classes before we finished the winter session and looking forward to the Spring session opening. What an adjustment. It started a flood of information and change that was truly overwhelming.

We have been told that classes may start again after April 8th depending on what the situation is at that time. I wanted to reach out to all of you and let you know that we miss seeing all of you in class or around campus and in town. I have valued the friendships that have developed out of the classroom experience. If we should resume classes mid April, it has been suggested that the late Spring start would take classes into mid June. Online registration is open at www.pgusd.org.

I also have 2 private classes that can’t meet in person due to shelter in place, so we are going to meet in a virtual classroom via Zoom. I will let you know how that goes. It will allow me to teach one on one and to groups until this situation is over and we are all back to the new normal.

So, please stay safe, practice all of the skills we are using to be healthy personally and for those around us.

I am available to talk if you want to setup any online teaching sessions or just need to vent. It is important to nourish the soul as well as the body and mind during times of change.

This course will cover more in depth focus on camera skills as well as the field trips designed to practice those skills and learn some post producing editing technique. Photoshop for Lightroom Users. Class begins on Thursday, Jan 9th, 5:30-8:30 PM for 10 weeks. Adobe Photoshop Lightroom is truly an awesome program, and the primary editing tool for so many photographers today. But, at some point, you realize that there are things you need to do to your images that Lightroom just can’t do.It could be anything from pro-level portrait retouching, to blending two or more images together, to incredible special effects, to removing distracting things in your image, to adding beautiful type to your images, and, well…there are just lots of incredible things you could do…if you just knew Photoshop. Spinach and Feta Quiche with Sweet Potato Crust

This recipe intrigued me with the “sweet potato crust” in the title. I was looking through some suggested holiday favorites and this one jumped out. So, it made the list of “I am going to try this”. It would either be one of those “wanna be” quiches or would be a keeper. So, here we go:

Ingredients:

Cooking Spray

2 medium sweet potatoes, peeled and cut into 1/8 inch thick slides

1 teaspoon canola oil

1/2 sliced onion

1 (5 oz) bag fresh baby spinach

1/2 cup 1% low fat milk

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon crushed red pepper (optional)

4 large eggs

2 large egg whites

1.5 ounces feta cheese, crumbled (about 1/3 cup)

  1. Preheat oven to 350 degrees Farenheit

  2. Coat a 9 inch pie plate with cooking spray (choose a deep dish one)

  3. Layer sweet potatoes in slight overlapping concentric circles on bottom of plate, cutting slices in half to fit around the side, rounded sides up.

  4. Coat potatoes with cooking spray.

  5. Bake in preheated oven for 20 minutes or until potatoes are slightly tender.

6. Heat a large nonstick skillet over medium heat. Add oil and onion; sauce 3 minutes

7. Add spinach; sauce 3 minutes remove from heat; cool

8. Combine milk and next 5 ingredients (salt, pepper, eggs, including the egg whites) in a medium bowl; stir with whisk.

9. Arrange spinach mix in crust; pour egg mixture over spinach. Sprinkle with feta.

10. Bake at 375 degrees F for 35 minutes or until egg mixture is set. Let stand for 5 minutes.

Serves 6-8 people. It was very good and worth repeating. Good for those guests who may be vegetarian.

Cranberry Gingerbread 2019 Holiday Season

I found this recipe for the holidays. Food & Wine’s Kay Chun makes a gingerbread loaf…..adds plenty of tart fresh cranberries. The loaf can be sliced, spread with sweet butter and served with a hot cup of tea or coffee. A spicy, aromatic break during the holidays.

Cranberry Gingerbread

Ingredients:

1/2 cup canola oil, plus more for greasing

3/4 cup unsulfured molasses

3/4 cup packed light brown sugar

2 large eggs

1 tablespoon finely grated peeled fresh ginger

1 1/2 cups fresh cranberries, 6 oz, coarsely chopped

2 cups all purpose flour

2 teaspoons baking powder

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon kosher salt

  1. Preheat the oven to 350 degrees and Grease an 8x4 inch loaf pan (I used a 9x5 inch loaf pan).

  2. In a large bowl, whisk the 1/2 cup canola oil with the molasses, brown sugar, eggs, ginger and cranberries.

3. In a medium bowl, sift the flour with the baking powder, baking soda, cinnamon, cloves and salt.

4. Whisk the flour mixture into the molasses mixture until well blended.

5. Scrape the batter into the prepared pan and bake for 50 minutes, until a cake tester inserted in the center comes out clean with a few moist crumbs attached. (Oven temps vary. I had to add 6 minutes to the bake time).

6. Transfer to a rack and let cool for 10 minutes, then unfold the gingerbread and let cool to room temperature before slicing and serving.

The gingerbread can be stored in an airtight container at room temperature for up to 3 days.

Cranberry Chutney

One of my favorite recipes. I just rediscovered it while looking for something else. I just made this for the house on Christmas Eve and felt it deserved to be photographed before consumption. Enjoy!!

Cranberry Chutney

4 cups (1 pound) fresh cranberries

1 cup Seedless Raisins

1 2/3 cups sugar

1 Tablespoon Cinnamon

1 1/2 Teaspoon ground Ginger

1/4 Teaspoon ground Cloves

1 cup water

1 medium-size onion, peeled and chopped

1 medium-sized apple, pared, quartered, cored, and chopped

1/2 cup thinly sliced celery

Comments on ingredients: I took liberties with the apples, I didn’t pare.

  1. Combine cranberries, raisins, sugar, spices and water in a large saucepan, Simmer 15 minutes, or until berries pop and mixture thickens. Cooking time may vary.

  2. Site in onion, apple, and celery; simmer 15 minutes long, or until mixture thickens.

  3. Ladle into hot sterilized jars; seal, following manufacturers instructions. OR you can put into a bowl and serve or store in the refrigerator.

  4. Makes 4 8oz jars.

Happy Holidays - A Year of Growth and Learning

2019 was a year to remember. All of the growth that came as a result of learning something new. You don’t have to take a class to learn something every day. The smallest observation or curiosity can lead to a new piece of information or realization that keeps us learning and growing.

I have my students to thank for all they teach me as we progress through each course. The questions and aha moments are the ones to be grateful for. Within each questions is the kernel or seed that leads us down the information hi way. Each aha moment makes me realize how grateful I am to have been able to share in those moments.

Creativity is fueled by all of the above and more. Curiosity is a powerful learning tool. Combine creativity and curiosity and it leads to wonderful moments of enlightenment and total joy at having reached that moment of being open to the idea.

Let’s rejoice in our ability to live, breathe and create learning experiences in our lives. Let’s continue our search and learning in 2020.

Volunteer Needed for Photographers Rendezvous Oct 18-20

We need a volunteer to help with Photographers Rendezvous 2019. Our regular staff member can’t make it this year. We can offer Room and Board at Mission San Antonio for the event October 18-20.
